The Holiday Bikini – A Recipe

WThis is an easy version of a cocktail from our latest menu. This is a batch pre-mixed that is bursting with essence of a holiday season, which makes it ideal for a holiday party. Reserve the remaining cordial you can use for brunch beverages, desserts, or for more rounds of the drink.

Bikini

Serves 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Premix (yields 850ml, enough for 10)

400ml decent vodka

150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Citrus Syrup: Place all the ingredients into a pot, bring to a light boil, agitating until the sugar dissolves. After that, turn off the heat allowing it to cool down completely. Pour to a clean bottle, seal and store in the fridge, it can be stored for about one month.

To make Batch Mix: Mix the specified liquid ingredients into a sizeable container, allow it to infuse for one hour, then strain , ideally through a fine cloth, so it's perfectly clear.

To serve: Add 85ml of the batch mix into a cocktail shaker packed with ice, gently stirring gently for a minute to cool it down. Filter into an chilled martini glass or a similar vessel, decorate with some cranberries and complete it by giving it a light spray of the essential oil above the glass.
